Bean - Jacob's Cattle - Phaseolus vulgaris -also called a Trout bean or an Appaloosa bean,

Tender Annual Bush. Dry.
These are striking white beans speckled with red. Their rich meaty flavor makes them a top choice for homemade baked beans. This variety cooks in half the time of most dry beans. Reliable early yields makes them popular for short seasons.

Jacob’s Cattle bean is also called a Trout bean or an Appaloosa bean, but Jacob’s Cattle bean is the oldest name for the variety. This bean is a Prince Edward Island heirloom. Legend has it that it was a gift from Maine’s Passamaquoddy Indians to Joseph Clark, the first white child born in Lubec, Maine.

It is a plump, white and red speckled, kidney-shaped bean. It is full-flavored, holds its shape under long cooking, and stands up well to plenty of seasoning. The bean has a rich aroma and has a rich and nutty aftertaste.
Soil & Water:
Legumes like well-drained soil rich in organic matter and a moderate amount of nutrients. Water lightly at planting, medium at flowering, and heavily throughout harvest time. Avoid overhead watering which can promote disease.

Planting & Growing:
Start indoors in short-season climates, or seed directly once soils have reached at least 65F, preferably after the last frost. Make small, successive plantings every 10 days for a continuous harvest.

Harvesting & Storage:
Bush beans will produce all of their fruit over a few weeks? time then stop producing. Leave the pods on the plant until they have completely dried. Store dry, shelled beans in an airtight container.
