Mung BeansThe mung bean is a very small, round bean closely related to the field pea. Here in the United States, mung beans are chiefly sprouted. Mung bean sprouts are characterized by their crisp, nutty flavor, ideal for stir fry and are also commonly eaten raw in salads. Mung beans are also used in Indian recipes skinned and split to make dal (sometimes written as dhaal, dhal or dhall.). The Sri Lankans use them to make idli. Split peas can also be substituted for this purpose. Mung beans are also considered low on the gas producing scale.
How to Sprout Mung Beans or Moong, Sprouting Mung Beans at Home!
Instructions:
1. Place the Mung beans in a jar. Pour water and rinse well. Repeat 2-3 times if necessary till the water runs clear.
2. Add water till 3/4 the bottle or upto the brim and close with the lid. Let it soak for 4-8 hours. This will depend on the climate and humidity of the place you live.
3. The seeds after soaking will be enlarged in size and as you can see they had absorbed the water and had come to the brim of the bottle.
4. Drain the water. Our work is done now and the rest of the job is left to Mother Nature to weave her magic.
5. Place the piece of cloth over the bottle mouth covering it fully and place a rubber band around the cloth to keep it in place. You can use a cotton cloth, a burlap, muslin cloth, a plastic sheet in which you had poked enough holes, or you can even poke holes all over the lid of the bottle/jar and you use. The beans need air to breathe so that it could sprout.
6. Place the bottle in a dark place. I left it on my kitchen counter itself and after 5-8 hours you can see small sprouts peeking out of the beans.
7. If you want the sprouts anywhere between 1/2 to 1 inch in length, let it rest for 1 more day and you can have sprouts like shown in the picture. Just make sure to rinse the sprouts and drain the water as it will keep the beans moist and helps in sprouting further. Do not let it go dry as it will kill the sprouting process.
8. Sprouted beans are ready to use as you wish. Make sure you store the sprouted beans in a moist area. I kept it in the fridge and also make sure to use it within the next day or two when it is still good and full of nutritive values.
9. Sprouting at home is a very healthy option than buying it from super market aisles as you never get to know whether clean water has been used for the process and if they had been allowed to sprout in hygienic conditions.
HOW TO GROW MUNG BEAN IN THE HOME GARDEN !
Many people know mung beans well, although they may not realize that mung beans are the familiar beans that make up bean sprouts (used in Asian recipes and in salads). Instead of growing mung beans as sprouts, you can also plant them in the garden and grow mung beans in the soil.
They can grow in virtually any environment and they do well both indoors and outdoors
Plant mung beans when the soil is warm and they will be ready for harvest in just over three months.

Harvest. Pick pods when they start to look dry, and color has usually turned brown or black as seen in picture above. Plant will continue to produce as you pick the pods. Crack the pods open to collect the mature seeds for storage and cooking.

Health Benefits. Mung beans are a rich source of vitamin B, C, E and K. Folate or folic acid, present in mung beans, helps in the formation of red blood cells. It also helps in reducing the chances of heart diseases, ensures normal growth of cells and assists in protein metabolism. Thiamine, a type of vitamin B, ensures proper functioning of the nervous system. Thiamine is also useful in releasing energy from carbohydrates.

Mung beans contain a host of minerals. Magnesium, relaxes the arteries and veins, resulting in increased flow of oxygen, nutrients and blood throughout the body. Copper helps in absorbing iron and also facilitates the process of protein metabolism. Iron helps the body build up resistance to stress, formation of hemoglobin, and plays an important role in the complete metabolism process. Zinc is useful for proper tissue growth and repair, boosting the immune system, and improving male infertility. Potassium is required to maintain a normal heartbeat, besides helping in muscle contraction.

Mung beans is one of dietary option since it is low in carbohydrates, but high in protein. The Bean sprout is bursting with protein.

How to Grow Mung Beans

Step 1
Prepare the planting area in the spring after the last threat of frost passes. Cultivate the soil with the garden spade down to a depth of at least 6 inches. Sprinkle 2 inches of compost over the top of the soil and work the compost in well with the garden spade. Rake the soil smooth.
Step 2
Make planting rows 2 feet apart with the hoe. Make the rows 1 inch deep.
Step 3
Plant the mung beans 1 inch apart along the rows. Cover the seeds with 1 inch of soil. Water the newly planted mung bean seeds generously.
Step 4
Keep the soil evenly moist while the mung beans are germinating.
Step 5
Remove weeds by hand as they appear, to keep the area free of weeds.
Step 6
. Apply Organic fertilizer to the mung beans when the plants are approximately 6 inches high.
Step 7
Harvest mung beans approximately 100 days after planting. Remove the entire plant from the ground by pulling it up.
Step 8
Tie up to five bean plants together to make bunches. Hang the bunches upside down in a shed. Alternatively, spread newspaper on the floor of a shed and spread the mung bean plants in a single layer on the newspaper. Allow the mung beans to dry completely within the pods.
